Thai Milk Tea with Tapioca Pearls
My teens and I love the milk tea at Ha Long Bay and since it’s about an hour round trip to get tea, we decided to save some time and learn to make it at home. I purchased some Thai tea mix, and boba tapioca pearls (Links off Amazon) then patiently waited for those to arrive. You will need to think about how to strain the tea after you add it to the hot water and it is done steeping. I used a clean cotton T-shirt. I also had a 1/2 gallon glass canning jar for tea and a one-quart jar to store boba pearls.
Note: 1 cup of tea mix to 4.5 cups of water. 1 cup of boba pearls to 10 cups of water.
I first make the tea and then make the boba pearls in another pot.

BUBBLE THAI MILK TEA
Homemade Thai Bubble Milk Tea is easy to make at home. First, make the Thai tea, then cook the tapioca pearls. Then assemble the drink using these easy instructions.

INGREDIENTS
1 cup Thai tea mix
1 cup sugar
4.5 cups water
1/2 gallon canning or other container
strainer(clean cotton t-shirt, colander, large pot or bowl)
1 cup Tapioca pearls
1/2 cup brown sugar
1/2 cup white sugar
10 cups water
2-quart canning jar or other type of container
Ice
Heavy cream, milk, half n half, or condensed milk
INSTRUCTIONS
For the tea: Bring 4.5 cups of water to a boil in a large pot. Add 1 cup of Thai tea mix and stir, observing so it doesn’t boil over. Line a piece of the cotton t-shirt over a strainer or colander sitting over a large bowl. After 5 minutes carefully pour tea into the t-shirt-lined strainer, which is on top of a large bowl. The T-shirt will strain the tea mix. Let sit until cool enough to pour into a 1/2 gallon jar or other container. Add 1 cup of sugar while the tea is warm and stir until dissolved. Allow to cool completely before storing in the refrigerator.
Tapioca Pearls:
Fill a pot with 10 cups of water and bring to a boil. Add 1 cup of tapioca pearls and boil for 10 minutes. Turn off the heat and cover the pot with a lid for 20 minutes. Strain pearls out of the water with a colander and add them to a quart jar or another type of container. Add 1/2 cup of brown sugar and 1/2 cup of white sugar to tapioca pearls and stir. Allow to cool completely before storing in the refrigerator.
Milk Tea with pearls: Fill a 16-ounce glass 1/3 of the way with ice cubes. Add 1/3 cup of tapioca pearls. Pour the tea into the glass until 3/4 full. Add heavy cream/milk/condensed milk to taste. (usually 1/4 cup for me). Enjoy!
NOTES
I have substituted equal parts Allulose and Swerve for sugar in this recipe for a low-carb option.
