Gen X kids remember the Saturday Meatloaf that our Boomer Mom’s made often. Not being a meat lover as a child I didn’t like meatloaf nights. Today we have a much wider array of ingredients and this recipe from decades ago got a makeover. I present to you Gen X meatloaf.

INGREDIENTS
12-ounce ground Pork
2 lbs ground Beef
1 cup Italian Bread Crumbs (see note #1)
1 cup Pork Rinds Crushed
1 packet of dry Onion Soup Mix
3 eggs Large
1 TSP Black Pepper
1 TSP Salt
1 TSP Garlic Powder
1 TSP Onion Powder
1 TBSP Beef Bouillon Powder or 3–4 cubes crushed
INSTRUCTIONS
1. Mix all ingredients in a bowl well. Ingredients must be evenly distributed so mix well.
2. Add all ingredients to a 5×9 inch loaf pan. ( 2lb pan UK)
3. Place pan on a baking sheet in a preheated oven, 350 F, 180 C, Gas Mark 4 for 1 1/2 hours.
NOTES
1. 2 cups of pork rinds can be used instead of 1. 2 cups of bread crumbs can also be used instead of pork rinds.
